Script:
You: (Ask about cheese.)
Eshelon: ...Pardon me? You're looking for the most expensive cheese to ever exist, so that you might... feed it to a bird?
You:
She's really hungry!
Eshelon: I... suppose I can't argue with that. I've watched riffrocs take fingers for less at the estate stables.
Eshelon: I've seen some records suggesting the Enfields were particularly interested in cheesemaking schemes.
You: Schemes?
Eshelon: Yes. Enfield Creamery once had a stranglehold on cheese production in the pre-Council era. It was quite profitable from my understanding.
Eshelon: Majordomo was the head of the creamery. It's said he loved cheese far more than he loved any of his children.
Eshelon: If any Maximally Aged Cheese remains in the modern age, it would be in his private vault.
Eshelon: As it so happens, I've been looking for the vault. I believe I've narrowed the location down to a general area.
Eshelon: I'm willing to share what I've found on the condition you bring me any documentation or extra samples you uncover.
Eshelon: For research purposes, of course. If you actually discover some, it would be a significant boon to Enfield historians.
You:
You wanna eat the cheese too, huh?
Eshelon: Of course not. It's academic interest. I doubt it's truly still palatable after so long.
Eshelon: Even if the Enfields were pioneers of food preservation techniques that would still be in use today if we hadn't outlawed Flow.
Eshelon: Here is a copy of my research. It should include excerpts from first-hand accounts and my own notes.
Eshelon: Don't forget to bring me anything else in the vault if you do happen to find it.
Eshelon: (You open the notes Eshelon has handed you.)
You:
Deal!

I mean, I might sneak a nibble first...

Do you know where I can find it?
